Step 1Place an absinthe spoon (perforated spoon) with a sugar cube on top of the glass of absinthe.
Step 2Soak the sugar cube in absinthe, light the sugar cube on fire, and burn it to some extent.
Step 3When the sugar cubes have melted to some extent, drip a little well-cooled water over the burned sugar cubes to dilute them about 3~5 times.
Step 4Stir using an absinthe spoon.
This style was popularized in the late 1990s by a salesman for a Czech absinthe manufacturer. This cocktail is a mysterious and romantic way to drink, as you can enjoy the sugar as it melts and falls into the glass. The sugar cube soaked in absinthe is placed on a special "absinthe spoon" with holes in it, lit on fire, and when it burns to the point that it does not burn, water is slowly added drop by drop. Once the fire is lit, water is slowly added drop by drop. The traditional Swiss and French styles do not light the fire, as the aroma and flavor of absinthe is lost when the fire is ignited. It is only a performance thing and should not be done with good absinthe of good quality. The addition of sweetness and water alleviates the characteristic bitterness, making it easy to drink.

By mixing absinthe with water, the bitter taste characteristic of medicinal herbs is alleviated, making it easy to drink. The essential oil of the herb contained in absinthe reacts with the water, turning it cloudy white and turning it a very mysterious color. It is recommended to combine absinthe and water at a ratio of 1 to 5.

Step 1Put the sugar syrup and mint leaves in a glass. Mash the mint leaves gently with a pestle until fragrant. Be careful not to mash the mint too much, as they will become too bitter and difficult to drink. Since mint stems tend to be edgy, remove the stems and add only the leaves for a more elegant flavor.
Step 2Fill a glass with crushed ice, pour absinthe into a glass and stir.
Step 3Pour the soda into the glass and stir gently.
Step 4Insert two straws and garnish with mint. Garnish the mint leaves on top by tapping them once lightly with the palm of your hand to make the aroma rise.
The unique herbal taste of absinthe, combined with the freshness of mint and the sweetness of sugar syrup, makes this cocktail sweet and refreshing.

The alcohol strength is strong, as it is almost entirely absinthe in quantity. The herbal taste of absinthe, combined with a little sweetness, makes it relatively easy to drink. The taste is very different depending on whether you like absinthe or not.
