    This style was popularized in the late 1990s by a salesman for a Czech absinthe manufacturer. This cocktail is a mysterious and romantic way to drink, as you can enjoy the sugar as it melts and falls into the glass. The sugar cube soaked in absinthe is placed on a special "absinthe spoon" with holes in it, lit on fire, and when it burns to the point that it does not burn, water is slowly added drop by drop. Once the fire is lit, water is slowly added drop by drop. The traditional Swiss and French styles do not light the fire, as the aroma and flavor of absinthe is lost when the fire is ignited. It is only a performance thing and should not be done with good absinthe of good quality. The addition of sweetness and water alleviates the characteristic bitterness, making it easy to drink.
