Step 1Chill the glasses and ingredients well in advance.
Step 2Pour Creme de Cassis and Champagne into a chilled glass and stir gently.
The white wine used for keel is changed to champagne. The bubbles that burst in the glass add a refreshing touch to the keel, and it was named "Royal (= royal style) keel." The gentle fruit of cassis and the sourness of crisp champagne combine to make it easy to drink. Replacing Creme de Cassis with Creme de Framboise becomes "Kir Royal".
